Braga Fresh, based in Soledad, Calif., has debuted
two organic chopped salad kits under its Josie’s
Organics product line: Organic Sweet Kale
Chopped Salad and Organic Asian Chopped Salad.
Josie’s Organics Sweet Kale Chopped Salad
(10-ounce) is a mix of organic kale, green cab-
bage, broccoli and radicchio. The organic toppings
included in the kit, roasted pumpkin seeds, dried
cranberries and poppyseed dressing, add sweet and savory ele-
ments to this mild chopped salad, say company officials. Josie’s
Organics Asian Chopped Salad kit (12-ounce) is a crunchy com-
bination of organic green cabbage, celery, carrots, cilantro and
green onions, plus organic almonds, sesame seeds, wonton strips
and tangy sesame dressing.
The easy-open bags offer an extra level of convenience and
provide an even greater premium experience to drive preference and repeat sales, officials add. Knowing that value-added
products and organics are what’s driving consumer purchasing
and fueling growth in the produce department, Braga Fresh is
continuing to develop a comprehensive product line of organic
chopped salads, and already has more flavor profiles in trial.
Braga Fresh is also creating custom salads for retail partners, and
in addition to the chopped salad kits, has seven more Josie’s
Organics salads planned for debut later this year.

Kayem Foods, the Chelsea,

brand, best known for its
gourmet chicken sausage,
has released two chicken
bacon products in the line. al fresco’s uncured ready-to-cook and
uncured ready-to-eat chicken bacon have 70 percent less fat than
cooked pork bacon according to USDA data. The bacon is naturally cured, so it has no nitrates, nitrites or artificial ingredients,
and is also gluten-free, say company officials.
“al fresco is all about eating better and what’s better than
bacon?,” says Sarah Crowley, director of marketing for al fresco all
natural. “How about all natural, uncured chicken bacon for only 30
calories? We are very excited to tap into consumers’ ever-growing
demand for bacon while still allowing them to make healthier food
choices without sacrificing flavor.”
Each 3-ounce package of al fresco fully cooked, ready-to-eat
chicken bacon contains 14 slices in two, 7-slice pouches. Each
8-ounce package of al fresco ready-to-cook chicken bacon con-
tains nine slices. Both have a suggested retail price of $4.49.
